Wine has been part of the Land of Israel since ancient times. Archaeological discoveries show wine presses and storage jars from the Canaanite and Israelite periods. In the Bible, wine is mentioned over 200 times—used for celebrations, religious rituals, Temple offerings, and daily life. The tribes of Judah, Asher, and Manasseh were known for vineyards, and regions like Judea, Samaria, Galilee, and Carmel were already central wine areas.
For much of the early 20th century, Israeli wine was sweet and sacramental, made in large quantities rather than for quality. Vineyards were mainly planted with Carignan and Alicante for bulk production.
Phase 2: Quality Revolution (1980–2000)
The transformation began in the 1980s–1990s with:

Israel began winning international awards, and critics around the world took notice.
Phase 3: Boutique Explosion (2000–present)
From the early 2000s, over 300 boutique wineries emerged. Regions like Judean Hills and Upper Galilee became known for quality terroir wines. Israeli winemakers introduced Mediterranean varietals like Syrah, Grenache, Mourvèdre, and Viognier to suit the warm climate.
Today, Israel produces approximately 40–45 million bottles annually, exporting to the US, Europe, and Asia. The industry combines technology, research, and precision agriculture — drip irrigation was even invented in Israel.
